JAN 12-26  BASQUE TASTING MENU $29

 

Etxea 120 year old sourdough with fresh churned butter and sea salt

 

FIRST COURSE

Heritage Cauliflower Soup. Pimenton olive oil

OR

Vasco Winter Salad. Green beans, candied walnuts, roasted winter squash, Point Reyes bleu cheese

 

SECOND COURSE

Lamb Cochifrito. Onions, garlic confit, fermented fennel, pimenton, kabocha puree

OR

Trout Navarre. Jamon, lemon, marcona almonds, braised cabbage

OR

Shrimp Pintxo. Garlic, piquillo pepper, onion, espelette butter on 120 yr old sourdough toast

OR

Pulpo Pintxo. Spanish octopus cooked sous vide for 6 hours. Grilled a la plancha with chorizo, piquillo, potato and kale.

 

DESSERT

Vasco's Chocolate Mini Mousse. Creme fraiche, cocoa nibs, piment d'espelette.
